Hi all, Sorry for not blogging for a bit. But we have been a bit on the busy side here with our rescue hedgehogs. It sort of snowballed. Although we thought we would only take in a couple at a time. It is hard to say no and when you get a litter of 4 at once....... well....anyway, hopefully I can get back to blogging about food again. Most of the hedgehogs should be hibernating now or starting to go into hibernation. Although we still have a couple in that we are taking care of and a few in the garden still that haven't succumbed yet.

We did take a trip to our fav farm shop the other day, when the fish guy was there and we got some nice Haddock that I used in this recipe.
First skin and bone the haddock. I put some butter in an oven proof dish and then scattered some sliced onions and then put the fish ontop of the onions.... Sprinkle on some seasonings.... Here I used salt, pepper and oregano.

I also crumbled up a bread roll and sprinkled on some oregano, dried parsley and some pepper.

Next I made a sauce using 1/2 onion chopped, a tin of tomatoes and a finely chopped garlic clove and some chopped celery. Cooked this mix for about 10 minutes with a little butter and more seasoning.

I put the sauce over the fish and sprinkled on some pine nuts.
Then I put on the seasoned bread crumbs and some grated cheddar cheese. Baked it in the oven 180C for 30 minutes.
I served over fresh cooked rice and with some mixed vegetables. :)
We have been enjoying some apples too that we picked up at the farm shop. I have made Apple crumble, Apple cake and even an Apple pie. YUM!!!!
