If you check out my other blog you will see I am in Christmas card making mode at the moment along with trying very hard to diet and exercise. So the cooking hasn't been all that experimental lately. Although I have tried out one or two new dishes. This is one of them....
This is Layne's Dad's Secretary's Pork Chili Verde (My version)
1 lb lean pork(cut in small pieces) or Pork mince
1 small onion, chopped
2 Tablespoons flour
1 Cup chopped tomatoes
1 clove garlic chopped very fine
1 teaspoon ground cumin
3 hot green chilies
2 1/2 cup hot water
Using 1 tablespoon shortening or bacon drippings brown meat over medium heat. Add onion and saute about 1 minute. Add flour and brown as for brown gravy. Remove from heat. Combine tomato, garlic and cumin and add to hot meat mixture. Add water, turn heat down and simmer about 45 minutes over low heat, or until the desired thickness is reached.I added more spices than called for and some more garlic and this time I only used 1 1/2 chilies chopped next time I will use all three. It did turn out really mild. I also added a bit of tomato puree and some salt.
Flour Tortillas
2 cups flour
2 1/2 teaspoon baking powder
3 tablespoons shortening/I used butter
about 3/4 cups warm water
With finger tips mix together the flour, baking powder and the shortening together until it looks like crumbs. Then add the water slowly. The Dough should be harder than for biscuits but softer than pie crust. Knead for about 5 minutes. Separate into 12 small balls. Roll out to about 1/4inch thick (I rolled mine really really thin) and cook on a hot frying pan (ungreased) turning once. I kept warm in an oven brought to temp and then turn off.
Refried Beans Mash
1 1/2 cups pinto beans.
In heavy skillet with 2 tablespoons bacon drippings cook stirring frequently until most of the liquid evaporates. (I used red kidney beans here and mashed them a bit. You can also use the chili sauce beans too)
If you are wonder who Layne is... He is my friend who I met on the Galaxy zoo site and his dad turned 90 this year! That is a real milestone. And this chili is really yummy!!!!!! Thanks Layne's Dad!!!!
