Hi all, sorry I haven't been posting of late. But we have been caring for baby hedgehogs. You can read all about what has been happening with them over on my other blog . Needless to say it is almost like having babies all over again. Night time feedings at 3 am. And baby formula to warm up. Eye droppers of meds etc. etc.. Oh and nappy changing too.
Things are starting to get calm again and soon we will be releasing the older one back into the wild. I may get back to cooking and blogging about it too. :) So please don't think I have totally abandoned this blog as I haven't. I did manage to make some red currant jelly....
So here is a quick recipe for you all.
Wash the red currants and place into a pan with a little water and boil for about 15 minutes until the berries juice flows...Then strain in a jelly bag or some muslin(calico). Measure your liquid and to 1 pint of juice add 1 lb of sugar. I added part jam sugar (which has pectin already added to it) and 3 tablespoons of port. Boil this up until it jells when tested on a saucer. Bottle into clean hot sterilized jars and seal with sterilized lids..... I do a hot water bath for 10 minutes. That is it..... Easy peasy. We had 4 lbs of currants off our main bush this year and that made 12 jars of jam(jelly) :)
